How to
Read an Olive Oil Label:
Harvest Date: The
harvest date indicates the age of the oil.
COOC: Look
for this label. The California Olive Oil Council certifies the condiment
grade quality of olive oil based on chemical analysis and blind taste
testing.
Estate Grown Oils: These are
considered premium quality oils. The label will name the producer, geographical
area, varietals of olives pressed, and extraction methods.
Pressing Method: Premium
oil comes from olives that are cold pressed without the use of heat or chemical
extractors.
Acidity: The
acidity of the oil determines its status as extra virgin olive oil. Olive oils
with less than 0.5% acidity (COOC standard) qualify as extra virgin olive oil.
